Program Courses

Introduction to Culinary Arts looks at the food service industry from every angle. Lessons on cookware and sanitation lead into basic recipes and nutrition. At the end, students learn about careers.

Culinary Arts Management 1 & 2 prepares students for gainful employment and/or entry into postsecondary education in the food production and service industry. Content provides students the opportunity to acquire marketable skills by examining both the industry and its career opportunities. Laboratory experiences simulate commercial food production and service operations.

Baking and Pastry arts is all about the breads, desserts, cakes, confectionery, pastries and other baked treats that are not generally part of the main course on a menu. This course is designed to provide students with the knowledge, skills and values necessary to be successful in the baking and pastry industry, including the operations side of a bakery.

In Advanced Baking and Pastry students will practice industry safety and sanitation when creating a wide variety of baked goods – desserts and pastries, cakes and tortes, sauces, creams, and custards, artisan breads and sourdough starts and display irresistible, mouthwatering delicacies using careers whether they choose to be self-employed or an employee. Student leadership and entrepreneurial skills, and technical skills attainment are demonstrated through active engagement.
